Mad Hatters and Tea Parties



Tea is a subject I could babble on for a long time. During uni I have been known to drink copious amounts of chai tea, boiling it up on my stove at home (and most likely leaving it there for a week to thicken and decay- delicious)

I had a tea revelation when I was at Friends of the Earth Wholefoods store on Smith st in Fitzroy when one of the volunteers was making a huge batch of tea for her pregnant friend. And it reminded me of all the amazing quality of this such a small inconspicuous plant.


I was so inspired I went home and started looking up all the health benefits of the teas I drank, which ones I should use when I am tired, sick, coughing, ill with arthritis (hopefully it will be a few years). Check out www.teabenefits.com , it's amazing!


One thing that is annoying about tea is that when you go out to a cafe and order tea it is overly priced and usually crap quality...so make your own!

Chai recipe.

Boil fresh cold water on the stove.
Once boiling add:

- 10 dried cloves
- 10 peppercorns
- 10 cardamon pods
- 1 stick of cinnamon
and a slice of ginger ( if that's how you like to rock)

Leave to dance (simmer) for about 15 minutes and then add 1 tsp of black tea and allow to simmer for 1-2 minutes.

Add your desired amount of milk and honey. (For a richer tea make 1/2 water 1/2 milk)

The indian cook who taught me this added copious amounts of cane sugar, which tasted delicious but is definitely not good for the teeth!
